Strawberry Rhubarb Gelatin

Ingredients

Add diced fresh rhubarb to shopping list 2 cups diced fresh rhubarb

Add sugar to shopping list 3/4 cup sugar

Add cold water to shopping list 1/4 cup cold water

Add (3 oz) strawberry gelatin to shopping list 1 pkg. (3 oz) strawberry gelatin

Add whipped topping to shopping list 1 1/2 cups whipped topping

Directions:

In a saucepan, bring rhubarb, sugar and water to a boil. Reduce heat; simmer, uncovered for 3-5 minutes or until the rhubarb is softened. Pour into a serving bowl. Refrigerate for 20 minutes or until partially set. Fold in whipped topping; chill until firm.
