Grilled Tomatoes With Pesto

Yield: 6 servings

Ingredients

3 medium firm tomatoes, cored and halved crosswise

check purchased pesto sauce 1/4 cup purchased pesto sauce

check onions, very thinly sliced 6 onions, very thinly sliced

1/2 cup Monterey Jack cheese, shredded (about 2 oz.)

check smoked almonds, chopped 1/3 cup smoked almonds, chopped

check parsley, snipped 2 tablespoons parsley, snipped

Directions:

Hollow out the top 1/4 inch of tomato halves with a spoon. Top each tomato half with 2 tablespoons pesto sauce and
an onion slice. Arrange tomatoes in 2 foil pie pans.

Place tomatoes in the center of the grill rack. Cover and grill for 8 to 10 minutes or until tomatoes are heated through.
